Serving Tip:
For a truly complete and comforting meal, serve this Colcannon with a rich vegan gravy and a side of your favorite roasted vegetables. It also makes a fantastic side dish for hearty roasts.Wine Advice:
Pairing wine with this hearty, savory dish is a delightful affair. A crisp white like a Sauvignon Blanc is a perfect choice, as its bright acidity will cut through the richness of the potatoes and stand up to the earthy flavors of the cabbage. If you prefer a red, a light-bodied Pinot Noir offers a lovely contrast. Its subtle cherry notes won’t overwhelm the dish and will provide a nice, smooth finish. It’s a pairing so comforting, it might just make you want to dance a jig.Nutritional Information
