White Bean & Tomato Salad
I got this delicious recipe while on vacation in England. We love it! If you can’t get cannellini beans, navy beans will work fine.

- 15- oz. can cannellini beans drained and rinsed
- 2 zucchini or yellow squash diced
- 1 pt. cherry tomatoes halved
- ½ c. red onion chopped
- 3 T. olive oil
- 2 T. lemon juice
- ¼ c. fresh cilantro chopped
Instructies
- Combine all ingredients in a large bowl.
- Cover and refrigerate.
- Let stand at room temperature 20 to
- 30 minutes before serving.
