Whole Maitake Mushrooms With Sesame Salt

At the restaurant Upland, in Manhattan, they serve a whole roasted mushroom that is transformative. The mushroom cooks up tender on the inside while the outside is super crunchy and crispy. I wanted to re-create the magic of that dish in the air fryer, and it works beautifully. The mushrooms condense in both flavor and physical structure and the seasonings make it incredibly savory—so much so that it could stand in for meat for a vegetarian or vegan. Try it and you might never eat small mushrooms ever again.

Ingrediënten

  • 1 tablespoon soy sauce
  • 3 teaspoons vegetable oil
  • 2 teaspoons toasted sesame oil
  • 1 garlic clove minced
  • 7 ounces maitake hen of the woods mushrooms
  • ½ teaspoon flaky sea salt
  • ½ teaspoon sesame seeds
  • ½ teaspoon finely chopped fresh thyme leaves

Instructies

  • In a small bowl, combine the soy sauce, 1 teaspoon of the vegetable oil, the sesame oil, and garlic.
  • Place the maitake mushrooms in more or less a single layer in the air fryer, then drizzle with the soy sauce mixture.
  • Cook at 300°F for 10 minutes.
  • Sprinkle with the sea salt, sesame seeds, and thyme, then drizzle with the remaining 2 teaspoons vegetable oil.
  • Cook until the mushrooms are browned and crisp at the edges and tender inside, about 5 minutes more.
  • Remove the mushrooms from the air fryer, transfer to plates, and serve hot.
