Wholesome Vegetable Melody Soup

Ingrediënten

  • 1 onion diced
  • 200 g fresh cauliflower chopped
  • 3 garlic cloves finely chopped
  • 1 tablespoon olive oil
  • 100 g 4oz mushrooms, sliced
  • 175 g 6oz carrots, chopped
  • 175 g 6oz celery, chopped
  • 1 small courgette chopped
  • 1 small yellow squash chopped
  • 200 g fresh broccoli broken into florets
  • 400 g 14oz canned chopped tomatoes
  • 200 ml 7fl oz tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3 chicken stock cubes crumbled

Instructies

  • Lightly sauté the garlic and onions in the olive oil.
  • Add the carrots and celery, and sweat for 3–5 minutes.
  • Incorporate the courgette and squash.
  • Cook for an additional 3–5 minutes.
  • Add the mushrooms, cauliflower, broccoli, canned chopped tomatoes, tomato sauce, dried basil, dried oregano, and crumbled chicken stock cubes.
  • Pour in 1.
  • 8 liters (3pt) of water.
  • Bring the mixture to a boil and simmer for 15 minutes.
