Wholesome Vegetable Melody Soup
Ingrediënten
- 1 onion diced
- 200 g fresh cauliflower chopped
- 3 garlic cloves finely chopped
- 1 tablespoon olive oil
- 100 g 4oz mushrooms, sliced
- 175 g 6oz carrots, chopped
- 175 g 6oz celery, chopped
- 1 small courgette chopped
- 1 small yellow squash chopped
- 200 g fresh broccoli broken into florets
- 400 g 14oz canned chopped tomatoes
- 200 ml 7fl oz tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 3 chicken stock cubes crumbled
Instructies
- Lightly sauté the garlic and onions in the olive oil.
- Add the carrots and celery, and sweat for 3–5 minutes.
- Incorporate the courgette and squash.
- Cook for an additional 3–5 minutes.
- Add the mushrooms, cauliflower, broccoli, canned chopped tomatoes, tomato sauce, dried basil, dried oregano, and crumbled chicken stock cubes.
- Pour in 1.
- 8 liters (3pt) of water.
- Bring the mixture to a boil and simmer for 15 minutes.
