Winter Greens Salad with Grilled Goat Cheese Medallions and Cranberry Vinaigrette

Ingrediënten

For the Salad:

  • 100 g goat’s cheese round with a rind
  • 1 ripe pear halved, cored, and sliced
  • Handful of pecans roughly broken
  • 80 g mixed winter greens such as arugula, watercress, and spinach
  • Crusty bread to serve
  • Oil for brushing

For the Cranberry Vinaigrette:

  • 1 tbsp cranberry sauce
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructies

Grill the Goat Cheese and Pears:

  • Preheat the grill to high and line the grill rack with foil.
  • Halve the goat cheese to make two discs.
  • Halve and core the pear, cut each half into slices, and arrange in two piles on the foil.
  • Lightly brush the pears with oil, then top each pile with a goat cheese disc (cut side up) and grill for a few minutes until lightly golden and bubbling.
  • Scatter with the pecans and grill for an additional minute.

Prepare the Cranberry Vinaigrette:

  • In a small bowl, whisk together cranberry sauce, olive oil, lemon juice, salt, and pepper until well combined.
  • Adjust the seasoning to taste.

Assemble the Salad:

  • Arrange the winter greens on two plates.
  • Place the grilled pears and goat cheese on top of the greens.
  • Drizzle the cranberry vinaigrette over the salad.
  • Scatter any stray pecans over the top.
