Ingrediënten

  • 2 pounds Chicken Wings cut up Buffalo-style
  • 6 Whole serrano chili peppers
  • 6 Whole red chili peppers
  • 10 Whole jalapeno peppers
  • 2 cups White wine
  • 1 Bottle Tabasco Sauce
  • ½ Bottle Worcestershire sauce
  • 10 tablespoons Cayenne pepper
  • 10 tablespoons Durkee red-hot sauce
  • 1 tablespoon Salt
  • 3 tablespoons Pepper
  • ½ cup Vinegar
  • 1 Fire Extinguisher Optional!

Instructies

Caution:

  • Wear rubber gloves while handling peppers to avoid irritation.

Prepare the Marinade:

  • In a blender, carefully puree serrano chili peppers, red chili peppers, jalapeno peppers, white wine, vinegar, Tabasco Sauce, Worcestershire sauce, cayenne pepper, Durkee red-hot sauce, salt, and pepper.
  • Caution: Be careful with the fumes; they can be potent.
  • Wear rubber gloves to protect your hands from pepper oils.

Marinate the Wings:

  • Put the puree into a bowl and marinate the chicken wings in the bowl.
  • Place the bowl in the fridge and let the wings marinate for 5 days.

Cooking the Wings:

  • After 5 days, carefully remove the wings from the marinade.
  • Broil the wings until cooked, approximately 15 minutes, turning occasionally.

Prepare the Sauce:

  • Take the remaining marinade and put it on the stove.
  • Add 1/4 cup sugar and heat to a boil.
  • Reduce until it thickens.

Finish the Wings:

  • Pour the thickened marinade over the cooked wings.
  • Re-broil the wings for about 5 more minutes.

Serve:

  • Serve the wings with soda water for maximum heat effect.
  • Keep plenty of ice water handy.
  • Optionally, have a fire extinguisher nearby, especially if you have an ulcer or low heat tolerance.

Notes / Tips / Wine Advice:

This recipe is extremely spicy, and handling hot peppers can cause irritation. Adjust the quantity of peppers and hot sauces to suit your heat preference. Always exercise caution when working with extremely spicy ingredients.
