Spray the chicken schnitzels generously with olive oil, then sprinkle them with the za’atar spice blend.
Carefully place the schnitzels in the air fryer basket, then slide it back into the appliance.
Keep the temperature set at 350ËšF and set the timer for 12 minutes, cooking until the chicken is cooked through.
Once done, transfer the cooked schnitzels to a cutting board and let them rest for 5 minutes before slicing them thickly.
In a bowl, combine the red wine vinegar, extra virgin olive oil, honey, and crushed garlic.
Season with salt and pepper to taste.
Add the sliced radishes, cherry tomatoes, cucumbers, chickpeas, and dill.
Toss gently to combine.
Spread the warm pita breads with hummus, then top with the prepared salad and the sliced chicken schnitzel.
Serve with lemon wedges.

Za’atar is a Middle Eastern spice blend that contains thyme, sumac, sesame seeds, and salt.
It can be found in major supermarkets and delis.
Alternatively, you can make your own za’atar by combining 1 tsp dried thyme, ½ tsp crushed sesame seeds, and ¼ tsp each of sumac and salt.
Warm the pita breads by placing them in the residual heat of the air fryer.
