Greek Pork

  • 2 pounds pork sirloin roast
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • ½ teaspoon mustard seeds
  • ½ teaspoon celery seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon Ancho chili powder
  • 1 teaspoon turmeric powder
  • ½ teaspoon ground ginger
  • 2 tablespoons olive oil
  • 2 cloves garlic finely chopped

Tzatziki

  • ½ cucumber finely chopped and squeezed
  • 1 cup full-fat Greek yogurt
  • 1 garlic clove minced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon minced fresh dill
  • A pinch of salt

Instructies

  • In a large mixing bowl, toss the pork sirloin roast with salt, black pepper, smoked paprika, mustard seeds, celery seeds, fennel seeds, Ancho chili powder, turmeric, ground ginger, olive oil, and chopped garlic until the meat is evenly coated.
  • Preheat your air fryer to 360°F (182°C).
  • Cook the pork for 30 minutes, then turn it over and cook for an additional 20 minutes until it reaches an internal temperature of 145°F (63°C).
  • While the pork is cooking, prepare the tzatziki.
  • In a bowl, mix the chopped and squeezed cucumber with Greek yogurt, minced garlic, olive oil, balsamic vinegar, dill, and a pinch of salt.
  • Refrigerate until ready to serve.
  • Once the pork is done, let it rest for 5 minutes before slicing.
  • Serve the pork slices with the chilled tzatziki sauce on the side.
