Zesty Lemon Tart

  • ½ cup of butter coarsely chopped
  • ¼ cup of confectioners’ sugar
  • 1 ¼ cups of all-purpose flour
  • 3 eggs
  • 1 cup of granulated sugar
  • Zest from 2 lemons finely grated
  • ½ cup of freshly squeezed lemon juice
  • Cooking spray
  • 1 medium lemon thinly sliced
  • 2 tablespoons of additional granulated sugar
  • Extra confectioners’ sugar for dusting

Instructies

  • Begin by preheating your 5- or 6-quart air fryer to 350°F for 3 minutes.
  • Grease an 8-inch round tart pan with a removable bottom.
  • In a small bowl, use an electric mixer to beat together the coarsely chopped butter and confectioners’ sugar until the mixture is smooth.
  • Stir in 1 cup of the all-purpose flour until it forms a dough.
  • Press this dough evenly over the base and up the sides of the tart pan.
  • Create a foil sling by folding a strip of foil and place it under the tart pan.
  • Carefully pull out the air fryer pan and basket, then lower the tart pan (with the foil sling) into the basket.
  • Slide the pan and basket back into the air fryer.
  • Keep the temperature at 350°F and set the timer for 10 minutes, allowing the crust to cook.
  • Using the back of a spoon, gently press the crust down to ensure it covers the base and sides of the pan.
  • Set the timer for an additional 8 minutes, cooking until the tart base is dry and turns a light golden color.
  • Meanwhile, let’s prepare the lemony filling.
  • In a medium saucepan, combine the eggs, granulated sugar, the remaining all-purpose flour, lemon zest, and lemon juice.
  • Whisk this mixture continuously over medium heat until it reaches a boil and thickens.
  • Pour the hot lemon filling into a separate bowl.
  • Then, pour this filling over the hot tart base in the basket.
  • Reset the temperature to 325°F and set the timer for 3-5 minutes, cooking until the filling sets.
  • After cooking, remove the tart pan from the basket.
  • Let the tart sit in the pan for about 10 minutes to cool slightly.
  • While the tart is cooling, apply cooking spray to the basket, then sprinkle the lemon slices with the additional granulated sugar.
  • Place these lemon slices in the basket.
  • Keep the temperature at 325°F and set the timer for 6 minutes to caramelize the lemon slices.
  • When serving, top the tart with the caramelized lemon slices, and lightly dust with confectioners’ sugar.

You can store the tart in the refrigerator in an airtight container for up to three days. Enjoy!
