Zesty Pork and Bacon Party Skewers
Flavor-packed pork and bacon skewers marinated in a rich, spiced coconut curry sauce – a crowd-pleaser for any occasion.
Equipment
- 1 cup cream of celery soup
- 1 (13.5-ounce) can coconut milk, unsweetened
- 2 tablespoons tamari sauce
- 1 teaspoon yellow mustard
- 1 tablespoon honey
- Salt and freshly ground white pepper, to taste
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- 1 teaspoon curry powder
- 2 pounds pork tenderloin, cut into bite-sized cubes
- 4 ounces bacon, cut into pieces
- 12 bamboo skewers, soaked in water

Instructies
Prepare the Marinade
- In a large pot, combine the cream of celery soup, coconut milk, tamari sauce, mustard, honey, salt, white pepper, cayenne, chili powder, and curry powder.
- Bring the mixture to a boil, then reduce the heat and simmer for 13 minutes until heated through.
Marinate the Pork
- Add the pork cubes to the pot and stir gently to coat.
- Refrigerate for 2 hours to allow the flavors to develop.
- Assemble the Skewers
- Thread the marinated pork cubes onto the soaked bamboo skewers, alternating with pieces of bacon.
Cook the Skewers
- Preheat your Air Fryer to 370°F (185°C).
- Place the skewers in the air fryer basket and cook for 15 minutes, turning a couple of times during cooking for even browning.
