Ziti with Sausage & Zucchini

- ¾ lb. ground Italian pork sausage
- 3 zucchini thinly sliced
- Salt and pepper to taste
- 28- oz. can whole tomatoes
- ⅛ teaspoon sugar
- 16- oz. pkg. ziti pasta cooked
Garnish:
- Grated Parmesan cheese
Instructies
- Brown the Italian pork sausage in a skillet over medium heat; drain, reserving one tablespoon of drippings in the skillet.
- Add thinly sliced zucchini to the skillet; season with salt and pepper.
- Sauté until the zucchini is tender and golden, about 10 minutes.
- Stir in whole tomatoes with their juice and sugar; bring to a boil, breaking up the tomatoes with a spoon.
- Return the browned sausage to the skillet and reduce heat to low.
- Cover and cook until heated through, about 5 to 6 minutes.
- Serve the sausage and zucchini mixture over cooked ziti pasta.
- Sprinkle with grated Parmesan cheese as a garnish.
