Preheat the oven to 325°.
In a large bowl, mix together the eggs and sugar.
Add the grated zucchini, melted butter, and vanilla, and stir to mix well.
In another large bowl, whisk together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
Add the flour mixture to the egg mixture and mix just until blended.
(Don’t overmix.
) Blend in the nuts and raisins (if using).
Pour the batter into 2 greased loaf pans and bake for 60 to 70 minutes or until done.
Let the zucchini bread sit for 10 minutes and then take the loaves out of the pans and place on wire racks to cool completely.
