Zucchini Bread

Ingrediënten

  • 3 eggs
  • cups sugar
  • 2 cups grated zucchini
  • 1 cup 2 sticks butter, melted and cooled slightly
  • 2 tsp. vanilla
  • 3 cups all-purpose flour
  • tsp. cinnamon
  • ½ tsp. nutmeg
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. salt
  • 1 cup walnuts
  • ½ cup raisins optional

Instructies

  • Preheat the oven to 325°.
  • In a large bowl, mix together the eggs and sugar.
  • Add the grated zucchini, melted butter, and vanilla, and stir to mix well.
  • In another large bowl, whisk together the flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  • Add the flour mixture to the egg mixture and mix just until blended.
  • (Don’t overmix.
  • ) Blend in the nuts and raisins (if using).
  • Pour the batter into 2 greased loaf pans and bake for 60 to 70 minutes or until done.
  • Let the zucchini bread sit for 10 minutes and then take the loaves out of the pans and place on wire racks to cool completely.
