- 4 c. zucchini unpeeled and sliced thinly
- ½ c. onions chopped
- 2 garlic cloves chopped
- 2 eggs slightly beaten
- 6 oz. mozzarella cheese grated
- 1 teaspoon dijon-style mustard
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 tsp. dried parsley
- Salt and pepper to taste
Instructies
- Preheat the oven to 350°F (175°C).
- Melt the butter in a large skillet over medium heat.
- Add the zucchini and onions and cook for about 10 minutes, stirring frequently until the vegetables are barely tender.
- Remove the skillet from the heat.
- Add the garlic, oregano, basil, parsley, salt, and pepper.
- Stir to combine.
