- 4 c. zucchini grated and drained
- 2 c. rice cooked
- 1 ½ c. mozzarella cheese grated, divided
- 1 ½ c. Parmesan cheese grated, divided
- 2 eggs
- 1 pound hamburger
- 1 medium onion chopped
- 2 cloves garlic chopped
- 1 15 1/2-oz. jar spaghetti sauce
- Salt and pepper to taste
Instructies
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the grated zucchini, cooked rice, eggs, and half of both the mozzarella and Parmesan cheeses.
- Press the zucchini mixture evenly into the bottom of a greased 13x9x2-inch baking dish to form the crust.
- Bake the crust for about 15 minutes, or until it is lightly browned and firm.
- While the crust is baking, prepare the topping.
- In a large skillet, brown the hamburger over medium-high heat.
- Drain the fat.
- Add the chopped onion and minced garlic to the skillet and cook until tender.
- Stir in the spaghetti sauce, salt, and pepper.
- Spread the hamburger mixture evenly over the pre-baked zucchini crust.
- Sprinkle the remaining mozzarella and Parmesan cheeses over the top.
- Bake for another 15 minutes, or until the cheese is completely melted and bubbly.
