Ingredients

  • 8 loin lamb chops about 1 ¼” thick
  • 2 tbsp Dijon or whole grain mustard
  • 1 tbsp lemon juice
  • ½ tsp olive oil
  • 1 tsp dried tarragon or any dried herb of choice
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a small bowl, mix the mustard, lemon juice, olive oil, and dried tarragon.
  • Season the lamb chops with salt and black pepper.
  • Brush the mustard mixture evenly over both sides of the lamb chops.
  • Preheat the air fryer to 200°C (400°F).
  • Place the lamb chops in the air fryer basket in a single layer.
  • Cook for 4 minutes per side for medium-rare (internal temperature of 130°F / 55°C).
  • For medium, cook for an additional 2 minutes per side.
  • Remove from the air fryer and let the lamb chops rest for 5 minutes before serving.
