Ingredients

For the chicken:

  • 2 boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 1 egg beaten
  • ½ cup panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil for frying
  • For the salad:
  • 4 cups mixed salad greens e.g., romaine, cabbage, carrots
  • ½ cup shredded red cabbage
  • ½ cup shredded carrots
  • ¼ cup sliced almonds optional
  • ½ cup crispy chow mein noodles

For the dressing:

  • ¼ cup honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sesame oil

Instructions

  • In a shallow bowl, add flour.
  • In another bowl, beat the egg.
  • In a third bowl, mix panko breadcrumbs, salt, and pepper.
  • Coat each chicken breast first in flour, then dip into the egg, and finally coat with the breadcrumb mixture.
  • Heat vegetable oil in a frying pan over medium heat and cook chicken for 4-5 minutes per side until golden brown and cooked through.
  • Let rest for a few minutes before slicing.
  • In a small bowl, whisk together honey, rice vinegar, mayonnaise, Dijon mustard, and sesame oil to make the dressing.
  • In a large mixing bowl, combine mixed greens, shredded cabbage, carrots, and crispy chow mein noodles.
  • Top the salad with sliced crispy chicken.
  • Drizzle with dressing and serve immediately.
