Ingredients
For the chicken:
- 2 boneless skinless chicken breasts
- ½ cup all-purpose flour
- 1 egg beaten
- ½ cup panko breadcrumbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons vegetable oil for frying
- For the salad:
- 4 cups mixed salad greens e.g., romaine, cabbage, carrots
- ½ cup shredded red cabbage
- ½ cup shredded carrots
- ¼ cup sliced almonds optional
- ½ cup crispy chow mein noodles
For the dressing:
- ¼ cup honey
- 1 tablespoon rice vinegar
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- ¼ teaspoon sesame oil
Instructions
- In a shallow bowl, add flour.
- In another bowl, beat the egg.
- In a third bowl, mix panko breadcrumbs, salt, and pepper.
- Coat each chicken breast first in flour, then dip into the egg, and finally coat with the breadcrumb mixture.
- Heat vegetable oil in a frying pan over medium heat and cook chicken for 4-5 minutes per side until golden brown and cooked through.
- Let rest for a few minutes before slicing.
- In a small bowl, whisk together honey, rice vinegar, mayonnaise, Dijon mustard, and sesame oil to make the dressing.
- In a large mixing bowl, combine mixed greens, shredded cabbage, carrots, and crispy chow mein noodles.
- Top the salad with sliced crispy chicken.
- Drizzle with dressing and serve immediately.
