Baked Corn

Corn, fresh or canned, can be made into a pleasing custard. Eggs and milk are still plentiful on most Amish homesteads.

Ingrediënten

  • 2 cups corn
  • 2 eggs
  • 1 cup milk
  • 1 Tbsp. flour
  • 1 Tbsp. sugar optional
  • ½ tsp. salt
  • dash of pepper
  • 2 Tbsp. melted butter or margarine
  • ½ cup bread or cracker crumbs
  • 2 Tbsp. butter or margarine

Instructies

  • Cook the corn.
  • Beat the eggs and milk.
  • Combine corn, eggs and milk, seasonings and 2 Tbsp.
  • butter or margarine.
  • Mix well.
  • Pour into greased 1½-quart baking dish.
  • Mix crumbs and butter and sprinkle over corn.
  • Bake at 350° for 40 minutes or until mixture is set.
