Barbecued Oysters Served With Hogwash

  • 48 Oysters Scrubbed

Hogwash

  • 120 ml Natural Rice Vinegar
  • 120 ml Seasoned Rice Vinegar
  • 2 Finely Chopped Shallots
  • 3 Tablespoons Freshly Squeezed Strained Lime Juice
  • 1 Small Jalapeno Chili Seeded and Finely Chopped
  • Fresh Roughly Chopped Cilantro

Instructies

  • Heat up the barbecue until it is very hot then place the unopened fresh oysters on to the lightly oiled grill and close the lid.
  • After about 3 minutes check to see if the oysters are open.
  • If the oysters are open then detach the oysters from the top shell using an oyster knife.
  • Then loosen the top shells and discard these.
  • Then you simply need to place a spoonful of the Hogwash sauce you have made over each one before serving them.
  • In order to make the Hogwash place the seasoned and natural rice vinegar into a bowl with the shallots, lime juice, jalapeno chili and cilantro and mix well together.
  • You should make this before you actually begin cooking the oysters, as it needs to go into the refrigerator for at least an hour.
