Instructions

To prepare BBQ Chicken Pieces:

  • Cook the chicken cubes in olive oil over medium-high heat for 5–6 minutes, until just cooked.
  • Do not overcook.
  • Refrigerate until chilled through, then coat the chicken with 2 tablespoons BBQ sauce.
  • Set aside in the refrigerator.

To make the pizza:

  • Place a pizza stone in the center of the oven and preheat to 500°F for one hour before cooking.
  • Spread 1/4 cup BBQ sauce evenly over the prepared dough, leaving a small rim.
  • Sprinkle 1 tablespoon smoked Gouda cheese over the sauce.
  • Cover with 3/4 cup shredded mozzarella.
  • Distribute half the BBQ chicken pieces evenly over the cheese.
  • Add 18–20 pieces of red onion across the surface.
  • Sprinkle an additional 1/4 cup mozzarella cheese over the top.
  • Transfer the pizza to the oven and bake for 8–10 minutes, or until the crust is crisp and golden and the cheese is bubbly in the center.
  • Carefully remove the pizza from the oven and sprinkle 1 tablespoon chopped cilantro over the hot surface.
