BBQ Chicken Pizza with Smoked Gouda

Ingredients
For BBQ Chicken Pieces:
- 10 oz. boneless skinless chicken breasts, cut into 3/4-inch cubes
- 1 tablespoon olive oil
- 2 tablespoons favorite BBQ sauce
For the Pizza:
- 1 recipe Thin Crust Dough
- Cornmeal semolina, or flour for handling
- ½ cup favorite BBQ sauce spicy-sweet sauce works best
- 2 tablespoons shredded smoked Gouda cheese
- 2 cups shredded mozzarella cheese
- ¼ small red onion sliced into 1/8-inch pieces
- 2 tablespoons chopped fresh cilantro
Instructions
To prepare BBQ Chicken Pieces:
- Cook the chicken cubes in olive oil over medium-high heat for 5–6 minutes, until just cooked.
- Do not overcook.
- Refrigerate until chilled through, then coat the chicken with 2 tablespoons BBQ sauce.
- Set aside in the refrigerator.
To make the pizza:
- Place a pizza stone in the center of the oven and preheat to 500°F for one hour before cooking.
- Spread 1/4 cup BBQ sauce evenly over the prepared dough, leaving a small rim.
- Sprinkle 1 tablespoon smoked Gouda cheese over the sauce.
- Cover with 3/4 cup shredded mozzarella.
- Distribute half the BBQ chicken pieces evenly over the cheese.
- Add 18–20 pieces of red onion across the surface.
- Sprinkle an additional 1/4 cup mozzarella cheese over the top.
- Transfer the pizza to the oven and bake for 8–10 minutes, or until the crust is crisp and golden and the cheese is bubbly in the center.
- Carefully remove the pizza from the oven and sprinkle 1 tablespoon chopped cilantro over the hot surface.
- Slice and serve immediately.
