Beer Barbecue Sauce from Heather Hope
Makes: 2½ cups

- 1 tablespoon olive oil
- 1 ⁄3 cup chopped onion
- 2 tablespoons garlic
- 2 tablespoons Worcestershire sauce
- 2 cups ketchup
- 2 tablespoons honey Dijon mustard
- 1 tablespoon molasses
- 1 tablespoon brown sugar
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ⁄3 teaspoon hot sauce or to taste
- 1 cup beer
Instructies
- Add the oil, onion and garlic in a saucepot over medium-high heat and cook until the onions soften, about 4 minutes.
- Add Worcestershire sauce, ketchup, honey Dijon, molasses, brown sugar, and hot sauce; Season it with salt and pepper and bring to a boil.
- Simmer it, uncovered, for half an hour, stirring occasionally.
- Remove your cooked sauce from heat.
- Stir in beer and puree sauce in a blender until smooth.
