Ingredients

  • 2 cups cooked and cooled white rice preferably day-old
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter
  • 2 eggs beaten
  • ½ cup carrots diced
  • ½ cup peas
  • ½ cup onion finely chopped
  • ½ cup grilled chicken diced (optional)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions sliced (for garnish)

Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Pour in the beaten eggs and scramble until fully cooked.
  • Remove and set aside.
  • Add the remaining oil and butter to the pan, then sauté the onions, carrots, and peas for about 3 minutes until softened.
  • Add the cooked rice to the pan and stir-fry for 2 minutes, breaking up any clumps.
  • Stir in the grilled chicken (if using), scrambled eggs, soy sauce, sesame oil, garlic powder, salt, and black pepper.
  • Mix well to combine.
  • Cook for another 2-3 minutes until everything is heated through.
  • Garnish with sliced green onions and serve hot.
