Creamy Broccoli & Stilton Soup
A rich and creamy broccoli soup infused with the bold flavor of Stilton cheese. Perfect for a comforting lunch or a light dinner.

Ingredients
- 1 liter vegetable stock
- 140 g Stilton cheese
- 1 medium potato diced
- 1 onion finely chopped
- 1 stick of celery sliced
- 1 head of broccoli chopped
- 2 tbsp rapeseed oil
Instructions
- Heat the rapeseed oil in a large pan.
- Add the chopped onion and cook until soft.
- Add the celery, potato, and butter.
- Allow to sweat for five minutes.
- Pour in the vegetable stock and add the chopped broccoli.
- Cook for 10-15 minutes until all the vegetables are tender.
- Blend the soup until smooth.
- Stir in the Stilton cheese, leaving a few lumps for texture.
- Season with black pepper to taste.
