Equipment

  • Blender or immersion blender

Ingredients

  • 1 liter vegetable stock
  • 140 g Stilton cheese
  • 1 medium potato diced
  • 1 onion finely chopped
  • 1 stick of celery sliced
  • 1 head of broccoli chopped
  • 2 tbsp rapeseed oil

Instructions

  • Heat the rapeseed oil in a large pan.
  • Add the chopped onion and cook until soft.
  • Add the celery, potato, and butter.
  • Allow to sweat for five minutes.
  • Pour in the vegetable stock and add the chopped broccoli.
  • Cook for 10-15 minutes until all the vegetables are tender.
  • Blend the soup until smooth.
  • Stir in the Stilton cheese, leaving a few lumps for texture.
  • Season with black pepper to taste.
