Carrot Orange Soup

Equipment

Ingredients

  • 5 cups carrots – sliced and skinned
  • 1 onion – chopped finely
  • 3 cups chicken broth Or 3 cups vegetable broth
  • 2 tsp fresh ginger – grated
  • ¾ cup orange juice
  • ½ cup whipped cream
  • Salt & pepper

Instructions

  • Skin and cut carrots to make ¼ inch slices

Add to slow cooker:

  • Carrots
  • Onion
  • Broth
  • Orange juice
  • Ginger
  • Salt & pepper
  • Heat on high for 4-6 hours, Or low for 101 hours
  • Once carrots are tender remove and add to blender
  • Blend until smooth and add back to slow cooker
  • Add whipped cream and stir

Notes / Tips / Wine Advice:

Serves 6-8 | Total time: 11 hrs 15 mins

Variation

Fry onion in butter with fresh dill and add to crockpot along with the other ingredients. This softens the taste of the onion. Substitute 1 cup of the stock with a ½ cup of water and ½ cup of white wine. When serving, swirl plain yogurt in each bowl along chopped fresh dill to add both color and fresh flavor.
