Carrot Orange Soup

Ingredients
- 5 cups carrots – sliced and skinned
- 1 onion – chopped finely
- 3 cups chicken broth Or 3 cups vegetable broth
- 2 tsp fresh ginger – grated
- ¾ cup orange juice
- ½ cup whipped cream
- Salt & pepper
Instructions
- Skin and cut carrots to make ¼ inch slices
Add to slow cooker:
- Carrots
- Onion
- Broth
- Orange juice
- Ginger
- Salt & pepper
- Heat on high for 4-6 hours, Or low for 101 hours
- Once carrots are tender remove and add to blender
- Blend until smooth and add back to slow cooker
- Add whipped cream and stir
