For Cake

  • ½ cup finely ground almond flour
  • ¼ cup erythritol sweetener
  • ½ teaspoon baking powder
  • ½ teaspoon instant espresso powder
  • teaspoon salt
  • 1 ½ tablespoons butter melted
  • 1 large egg
  • ½ teaspoon cream of tartar
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

For Cinnamon Layer

  • 2 ¼ tablespoons butter melted
  • cup erythritol sweetener
  • 1 tablespoon ground cinnamon
  • 1 ½ tablespoons cassava flour

For Cheesecake

  • 170 grams cream cheese room temperature
  • 1 ½ tablespoons erythritol sweetener
  • ¼ teaspoon vanilla extract
  • 1 large egg

For Pecan Streusel

  • cup pecan pieces
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract
  • ¼ cup erythritol sweetener
  • 1 ½ tablespoons butter melted

Instructies

To make Cake:

  • In a medium bowl, combine all ingredients.
  • Spread in a 18cm springform pan greased with cooking spray.

To make Cinnamon Layer:

  • In a small bowl, combine all ingredients.
  • Spread over cake in pan.

To make Cheesecake:

  • In a medium bowl, combine all ingredients until smooth.
  • Spread over cinnamon layer.

To make Pecan Streusel:

  • In a small bowl, combine all ingredients.
  • Drop in small crumbles over cheesecake.
  • Preheat air fryer at 150°C for 3 minutes.
  • Cover pan with aluminium foil.
  • Place pan in air fryer basket and cook for 10 minutes.
  • Remove foil and cook for an additional 5 minutes.
  • Let pan cool for 30 minutes uncovered, then cover and refrigerate for at least 2 hours, up to overnight.
  • Slice and serve.

Instructies

  • Preheat air fryer at 150°C for 3 minutes.
  • In a medium bowl, combine flour, erythritol, baking powder and salt.
  • Set aside.
  • In a small bowl, combine butter, egg, gelatin, vanilla and cinnamon.
  • Add egg mixture to flour mixture and stir until smooth.
  • Spoon mixture into an ungreased pizza pan.
  • Place pan in air fryer basket and cook for 10 minutes.
  • Remove pan and let set for 5 minutes, then slice and serve warm.

Notes / Tips / Wine Advice:

WHERE DO I FIND PECAN FLOUR?
Usually, almond flour is the most readily available nut flour on the market, and although sold commercially, nut flours can be a little pricey. But I’ll share a secret with you: the only ingredient you need is your choice of nut. Just throw a handful in the food processor and pulse to your desired consistency, whether chunky or fine, depending on the recipe. But don’t pulse for too long, as you’ll create a nut butter!
