Sometimes low-carb breakfasts can feel a little repetitive with all of the egg dishes when you just want a bowl of cereal. Well, now you can make your own grain-free version! Serve with some unsweetened almond milk or over a bowl of Greek yoghurt with fresh berries.
Spoon mixture into an ungreased round 4-cup baking dish.
Place in air fryer basket and cook for 3 minutes.
Stir, then cook for an additional 3 minutes.
Transfer to an airtight container, let cool for 10 minutes, then cover and store at room temperature until ready to serve

WHERE DO I FIND PECAN FLOUR?
Usually, almond flour is the most readily available nut flour on the market, and although sold commercially, nut flours can be a little pricey. But I’ll share a secret with you: the only ingredient you need is your choice of nut. Just throw a handful in the food processor and pulse to your desired consistency, whether chunky or fine, depending on the recipe. But don’t pulse for too long, as you’ll create a nut butter!
