Ingrediënten

  • 4 large potatoes approximately 3 pounds
  • 1 tablespoon butter or margarine
  • 3 cups chopped cooked ham
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • ½ cup sour cream
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¾ cup shredded Parmesan cheese

Garnish (optional):

  • chopped fresh chives

Instructies

  • Preheat your oven to 450°F (230°C).
  • Place the potatoes on a baking sheet and bake them for approximately 1 hour or until they become tender.
  • Allow them to cool to the touch.
  • Cut the baked potatoes in half lengthwise and carefully scoop out the potato pulp, placing it in a bowl while leaving the potato shells intact.
  • Set aside both the potato pulp and shells.
  • In a large skillet, melt the butter over medium-high heat.
  • Add the chopped ham, diced onion, and minced garlic, and sauté the mixture until the onion becomes tender.
  • Mash the potato pulp in the bowl and then stir in the sautéed ham mixture, sour cream, salt, and pepper until well combined.
  • Stuff the potato shells with the potato and ham mixture, and evenly sprinkle the shredded Parmesan cheese on top.
  • Place the stuffed potatoes in a 13×9-inch baking pan or casserole dish.
  • Bake at 350°F (175°C) for 25 to 30 minutes, or until they are heated through and the cheese has melted to a golden brown.
  • If desired, garnish the stuffed potatoes with chopped fresh chives before serving.
