Instructies
Preheat your oven to 450°F (230°C).
Place the potatoes on a baking sheet and bake them for approximately 1 hour or until they become tender.
Allow them to cool to the touch.
Cut the baked potatoes in half lengthwise and carefully scoop out the potato pulp, placing it in a bowl while leaving the potato shells intact.
Set aside both the potato pulp and shells.
In a large skillet, melt the butter over medium-high heat.
Add the chopped ham, diced onion, and minced garlic, and sauté the mixture until the onion becomes tender.
Mash the potato pulp in the bowl and then stir in the sautéed ham mixture, sour cream, salt, and pepper until well combined.
Stuff the potato shells with the potato and ham mixture, and evenly sprinkle the shredded Parmesan cheese on top.
Place the stuffed potatoes in a 13x9-inch baking pan or casserole dish.
Bake at 350°F (175°C) for 25 to 30 minutes, or until they are heated through and the cheese has melted to a golden brown.
If desired, garnish the stuffed potatoes with chopped fresh chives before serving.
