Authentic Chicago-Style Pizza

Ingredients
Dough:
- 1 package active dry yeast
- 2 teaspoons sugar
- 1 ¼ cups warm water
- 2 ¾ cups all-purpose flour
- ½ cup yellow cornmeal
- 3 tablespoons olive oil
- 1 teaspoon salt
Topping:
- 1 cup pizza sauce
- 12 oz. shredded mozzarella cheese
- ½ lb. ground beef crumbled and cooked
- ¼ lb. Italian sausage crumbled and cooked
- ¼ lb. pork sausage crumbled and cooked
- ½ cup pepperoni diced
- ½ cup Canadian bacon diced
- ½ cup ham diced
- ¼ lb. mushrooms sliced
- 1 small onion sliced
- 1 green bell pepper seeded and sliced
- 2 oz. grated Parmesan cheese
Instructions
- In a small bowl, combine yeast, sugar, and warm water.
- Let stand for 5 minutes until foamy.
- In a large bowl, mix flour, cornmeal, olive oil, and salt.
- Make a well in the center and pour in the yeast mixture.
- Stir to form a soft dough, adding more flour if necessary.
- Turn the dough onto a floured board and knead for 7–10 minutes until it becomes supple and elastic.
- Transfer the dough to a large bowl, cover it, and let it rise in a warm spot until doubled in size, about 1 hour.
- Punch down the dough.
To assemble the pizza:
- Roll the dough into a 13-inch circle.
- Transfer the dough to an oiled 12-inch pizza pan, folding the excess dough over to create a small rim.
- Spread the pizza sauce evenly over the dough.
- Sprinkle most of the mozzarella cheese over the sauce, reserving some for the topping.
- Add cooked meats, vegetables, and the remaining mozzarella cheese.
- Top with grated Parmesan cheese.
- Let the assembled pizza rise in a warm spot for 25 minutes.
To bake the pizza:
- Preheat the oven to 475°F (245°C).
- Bake the pizza for about 25 minutes, or until the crust is golden and the cheese is bubbly.
- Let the pizza rest for 5 minutes before slicing and serving.
