  • ½ white onion
  • 1 tbsp olive oil
  • 1 rotisserie-cooked chicken – skinless & deboned
  • 10 ½ oz can tomatoes & chilies
  • 2 cups half & half
  • 3 x 14 ½ oz cans chicken broth
  • 11 oz can southwestern style corn
  • oz package taco seasoning mix
  • Shredded cheese
  • Fried corn tortilla strips

Instructies

  • Sauté onions in olive oil
  • Shred chicken

Combine in crockpot:

  • Shredded chicken
  • Onions
  • Broth
  • Half & half
  • Tomatoes
  • Corn
  • Seasoning mix
  • Stir
  • Cook on low for 2-4 hours
  • Serve with shredded cheese and tortilla strips
