Chicken Ratatouille Stir-Fry
Ratatouille is a French stewed dish with tomatoes, eggplant, zucchini and capsicum. This air fryer version with chicken gives you a full meal in just minutes, much less time than the traditional stew would take to make.

- 450 grams boneless skinless chicken thighs, cut into 3cm cubes
- 1 small eggplant cut into 3cm cubes
- 1 medium zucchini cut into 3cm cubes
- 1 small yellow bell capsicum seeded and diced
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- 1 ½ tablespoons olive oil
- 410 grams canned diced tomatoes including juice
- 1 ½ tablespoons grated Parmesan cheese
- 1 ½ tablespoons julienned fresh basil leaves
Instructies
- Preheat air fryer at 200°C for 3 minutes.
- In a large bowl, combine chicken, eggplant, zucchini, capsicum, salt, Italian seasoning and olive oil.
- Add chicken and vegetables to ungreased air fryer basket and cook for 7 minutes.
- Transfer chicken mixture to an ungreased cake barrel.
- Stir in tomatoes with juice.
- Cook for an additional 8 minutes.
- Using a meat thermometer, ensure internal temperature is at least 75°C.
- Transfer to a large serving dish.
- Toss with Parmesan cheese and garnish with basil.
- Serve.
