Chicken Ratatouille Stir-Fry

Ratatouille is a French stewed dish with tomatoes, eggplant, zucchini and capsicum. This air fryer version with chicken gives you a full meal in just minutes, much less time than the traditional stew would take to make.

Equipment

  • 450 grams boneless skinless chicken thighs, cut into 3cm cubes
  • 1 small eggplant cut into 3cm cubes
  • 1 medium zucchini cut into 3cm cubes
  • 1 small yellow bell capsicum seeded and diced
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 ½ tablespoons olive oil
  • 410 grams canned diced tomatoes including juice
  • 1 ½ tablespoons grated Parmesan cheese
  • 1 ½ tablespoons julienned fresh basil leaves

Instructies

  • Preheat air fryer at 200°C for 3 minutes.
  • In a large bowl, combine chicken, eggplant, zucchini, capsicum, salt, Italian seasoning and olive oil.
  • Add chicken and vegetables to ungreased air fryer basket and cook for 7 minutes.
  • Transfer chicken mixture to an ungreased cake barrel.
  • Stir in tomatoes with juice.
  • Cook for an additional 8 minutes.
  • Using a meat thermometer, ensure internal temperature is at least 75°C.
  • Transfer to a large serving dish.
  • Toss with Parmesan cheese and garnish with basil.
  • Serve.
