Chicken Ratatouille Stir-Fry
Ratatouille is a French stewed dish with tomatoes, eggplant, zucchini and capsicum. This air fryer version with chicken gives you a full meal in just minutes, much less time than the traditional stew would take to make.

canned diced tomatoes
including juice

grated Parmesan cheese

julienned fresh basil leaves
Instructies
Preheat air fryer at 200°C for 3 minutes.
In a large bowl, combine chicken, eggplant, zucchini, capsicum, salt, Italian seasoning and olive oil.
Add chicken and vegetables to ungreased air fryer basket and cook for 7 minutes.
Transfer chicken mixture to an ungreased cake barrel.
Stir in tomatoes with juice.
Cook for an additional 8 minutes.
Using a meat thermometer, ensure internal temperature is at least 75°C.
Transfer to a large serving dish.
Toss with Parmesan cheese and garnish with basil.
Serve.
