Cilantro Pepita Pesto
This vibrant Latin-inspired pesto blends fresh cilantro, crunchy pepitas, and zesty spices into a rich, flavorful sauce. Perfect for pasta, rice, or as a bold aioli base for sandwiches!

Ingrediënten
- 2 cups 50 g fresh cilantro leaves
- 1 cup 138 g shelled pepitas (pumpkin seeds)
- 1 tablespoon 15 g minced garlic
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- ¾ cup 180 ml olive oil
- Salt and pepper to taste
Instructies
- Place all the ingredients in a blender.
- Blend until smooth.
- Adjust seasoning with salt and pepper to taste.
- Serve over pasta, mix with rice, or blend into vegan mayonnaise for aioli.
