Classic Lobster Salad
This luscious salad pairs perfectly with a glass of dry white wine or chilled rosé. The tarragon can be switched out for dill, and if you have only a lime on hand, use it instead of the lemon. Always remember that you can tailor recipes to your taste buds (or the ingredients in your refrigerator). Have fun and make it your own recipe!

- 2 170 gram uncooked lobster tails
- ¼ cup mayonnaise
- 2 teaspoons fresh lemon juice
- 1 small stalk celery sliced
- 2 teaspoons chopped fresh chives
- 2 teaspoons chopped fresh tarragon
- ¼ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- 2 thick slices of a large tomato
- 1 small avocado peeled, pitted and diced
Instructies
- Preheat air fryer at 200°C for 3 minutes.
- Using kitchen shears, cut down the middle of each lobster tail on the softer side.
- Carefully run your finger between the lobster meat and the shell to loosen meat.
- Place lobster tails, cut sides up, in ungreased air fryer basket.
- Cook for 8 minutes.
- Transfer tails to a large plate and let cool for about 3 minutes until easy to handle, then pull lobster meat from shell.
- Roughly chop meat and add to a medium bowl.
- Add mayonnaise, lemon juice, celery, chives, tarragon, salt and pepper to bowl.
- Combine.
- Divide lobster salad between two medium plates, top with tomato slices and garnish with avocado.
- Serve.
