Cobb Sandwiches

Similar to the famous Cobb Salad, this sandwich boasts the same stack of great ingredients: chicken, bacon, tomato, avocado, and blue cheese.

Ingrediënten

Makes 4 servings / Prep: 15 min., Grill: 10 min., Chill: 30 min.

  • 4 skinned and boned chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 ripe avocado
  • 1 teaspoon fresh lemon juice
  • cup mayonnaise
  • 8 slices challah or other egg bread toasted
  • 4 Boston lettuce leaves
  • 1 tomato thinly sliced
  • 8 ounces blue cheese thinly sliced
  • 8 bacon slices cooked and crumbled

Instructies

  • Sprinkle chicken with salt and pepper; place in a shallow dish.
  • Combine oil, vinegar, and mustard; pour over chicken.
  • Cover chicken, and marinate in refrigerator at least 30 minutes, turning occasionally.
  • Drain chicken, discarding marinade.
  • Coat grill rack with cooking spray; place on grill over medium-high heat (350° to 400°).
  • Grill chicken, covered with grill lid, 5 minutes on each side or until done.
  • Let chicken stand until cool to touch; cut chicken diagonally into thin slices.
  • Slice avocado, and sprinkle with lemon juice.
  • Spread mayonnaise evenly on 1 side of each bread slice.
  • Layer 4 slices of bread with lettuce, tomato, avocado, cheese, bacon, and chicken; top with remaining bread slices.
