Corn Salsa

Ingrediënten

  • 4 large fresh ears corn
  • 1 cup chopped onion
  • 1 cup chopped red or green bell peppers
  • 1 cup chopped tomatoes
  • 1 fresh jalapeño pepper seeded and chopped*
  • ½ cup lime juice
  • ½ –1 teaspoon salt to taste
  • ½ teaspoon ground cumin
  • ½ –1 teaspoon black pepper to taste

Instructies

  • Remove husks from corn, rinse, and cut kernels from cobs.
  • In a large saucepan, combine 2 cups corn kernels along with other ingredients.
  • Bring to a boil and simmer for 10 minutes.
  • Ladle into clean jars.
  • Process in boiling-water bath for 15 minutes.

Notes / Tips / Wine Advice:

*Wear rubber gloves when chopping hot peppers to avoid skin irritation.
