Serves 6-8:
- 3 tablespoons plus 1 teaspoon olive oil
- 1 medium onion coarsely chopped
- ¼ pound 2 links chorizo sausage, cut into 1/4-inch pieces
- ¼ pound Serrano ham or prosciutto cut into 1/4-inch cubes
- 2 medium potatoes boiled, peeled, and cut into small pieces
- 2 pimientos roasted red peppers, cut into thin strips
- ½ cup boiled string beans halved
- ½ cup boiled peas
- 6 cooked asparagus spears each cut into 4 pieces
- 8 large eggs
- Salt to taste
Instructies
Sauté Onion and Meats:
- Heat 2 tablespoons of the olive oil in a 10-inch skillet over medium heat.
- Add the chopped onion and cook until it’s wilted and transparent, about 5 minutes.
- Add the chorizo, ham, and boiled potatoes, cooking for another 5 minutes.
- Then, add the pimientos, string beans, peas, and asparagus.
- Continue cooking and stirring for about 5 more minutes.
- Once done, transfer the mixture to a plate and wipe out the skillet.
Prepare the Egg Mixture:
- In a large bowl, lightly beat the eggs with a fork.
- Add the sautéed mixture from step 1, season with salt, and fold everything together to combine.
Cook the Omelet:
- In the same skillet, heat 1 tablespoon of olive oil over high heat until it’s very hot.
- Quickly pour in the potato-and-egg mixture and distribute it evenly.
- Reduce the heat to medium-high and cook, occasionally shaking the skillet to prevent sticking, until the edges and bottom begin to brown, and the center is less liquid.
Flip and Finish:
- Slide the omelet onto a plate, cover it with a second plate, and carefully flip it over.
- Heat the remaining 1 teaspoon of olive oil in the skillet until very hot.
- Slide the omelet back into the skillet and continue cooking, shaking it constantly, until the bottom is browned and the center is set but still slightly juicy within.
Serve:
