Instructies
Sauté Onion and Meats:
Heat 2 tablespoons of the olive oil in a 10-inch skillet over medium heat.
Add the chopped onion and cook until it's wilted and transparent, about 5 minutes.
Add the chorizo, ham, and boiled potatoes, cooking for another 5 minutes.
Then, add the pimientos, string beans, peas, and asparagus.
Continue cooking and stirring for about 5 more minutes.
Once done, transfer the mixture to a plate and wipe out the skillet.
Prepare the Egg Mixture:
In a large bowl, lightly beat the eggs with a fork.
Add the sautéed mixture from step 1, season with salt, and fold everything together to combine.
Cook the Omelet:
In the same skillet, heat 1 tablespoon of olive oil over high heat until it's very hot.
Quickly pour in the potato-and-egg mixture and distribute it evenly.
Reduce the heat to medium-high and cook, occasionally shaking the skillet to prevent sticking, until the edges and bottom begin to brown, and the center is less liquid.
Flip and Finish:
Slide the omelet onto a plate, cover it with a second plate, and carefully flip it over.
Heat the remaining 1 teaspoon of olive oil in the skillet until very hot.
Slide the omelet back into the skillet and continue cooking, shaking it constantly, until the bottom is browned and the center is set but still slightly juicy within.
Serve:
Slice the omelet into wedges and serve hot or at room temperature.
Enjoy your hearty Spanish Tortilla Paisana with friends and family!
