  • 2 tablespoons cornstarch
  • 1 ¾ cups whole-berry cranberry sauce
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • ½ cup eggnog
  • teaspoon ground nutmeg
  • ½ teaspoon sugar
  • 1 cup softened cream cheese
  • ¾ cup melted butter
  • 2 ½ cups old-fashioned oats
  • 1 package spice cake mix

Instructies

  • Preheat the oven to 350°F.
  • Line a 13×9-inch baking sheet with parchment paper, ensuring that the ends come up the sides, and grease the paper.
  • In a large bowl, combine oats and cake mix.
  • Mix in melted butter.
  • Reserve 1 1/3 cups of the crumb mixture and press the remaining mixture into the prepared pan, spreading and pressing it evenly.
  • In another large bowl, beat cream cheese, nutmeg, sugar until smooth.
  • Gently mix in eggnog and flour.
  • Add eggs and beat on low speed until just combined.
  • Pour the mixture over the crust.
  • In a small bowl, stir cornstarch into the cranberry sauce until well combined.
  • Spoon the cranberry mixture over the cheesecake layer.
  • Sprinkle the reserved crumb mixture on top.
  • Bake for 55 minutes or until the edges are browned, and the center is set.
  • Place the pan on a wire rack and cool for at least one hour.
  • Freeze for 2 hours.
  • Lift the cheesecake from the pan using the parchment paper and cut it into bars before serving.
