- 2 tablespoons cornstarch
- 1 ¾ cups whole-berry cranberry sauce
- 3 large eggs
- 2 tablespoons all-purpose flour
- ½ cup eggnog
- ⅛ teaspoon ground nutmeg
- ½ teaspoon sugar
- 1 cup softened cream cheese
- ¾ cup melted butter
- 2 ½ cups old-fashioned oats
- 1 package spice cake mix
Instructies
- Preheat the oven to 350°F.
- Line a 13x9-inch baking sheet with parchment paper, ensuring that the ends come up the sides, and grease the paper.
- In a large bowl, combine oats and cake mix.
- Mix in melted butter.
- Reserve 1 1/3 cups of the crumb mixture and press the remaining mixture into the prepared pan, spreading and pressing it evenly.
- In another large bowl, beat cream cheese, nutmeg, sugar until smooth.
- Gently mix in eggnog and flour.
- Add eggs and beat on low speed until just combined.
- Pour the mixture over the crust.
- In a small bowl, stir cornstarch into the cranberry sauce until well combined.
- Spoon the cranberry mixture over the cheesecake layer.
- Sprinkle the reserved crumb mixture on top.
- Bake for 55 minutes or until the edges are browned, and the center is set.
- Place the pan on a wire rack and cool for at least one hour.
- Freeze for 2 hours.
- Lift the cheesecake from the pan using the parchment paper and cut it into bars before serving.
