Creamed-Corn Cornbread

- 1 cup yellow cornmeal
- ¾ cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup milk
- 1 large egg
- 2 tablespoons vegetable oil
- 1 8½-ounce can cream-style corn
- 2 to 3 teaspoons vegetable oil or bacon drippings
Instructies
- Combine first 5 ingredients in a bowl; make a well in center of mixture.
- Stir together milk and next 3 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
- Coat bottom and sides of a 9-inch cast-iron skillet with vegetable oil or bacon drippings.
- Place skillet in a 450° oven for 5 minutes.
- Remove from oven, and immediately spoon cornbread batter into hot skillet.
- Bake at 450° for 20 to 22 minutes or until a wooden pick inserted in center comes out clean.
