Creamed-Corn Cornbread

  • 1 cup yellow cornmeal
  • ¾ cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 8½-ounce can cream-style corn
  • 2 to 3 teaspoons vegetable oil or bacon drippings

Instructies

  • Combine first 5 ingredients in a bowl; make a well in center of mixture.
  • Stir together milk and next 3 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
  • Coat bottom and sides of a 9-inch cast-iron skillet with vegetable oil or bacon drippings.
  • Place skillet in a 450° oven for 5 minutes.
  • Remove from oven, and immediately spoon cornbread batter into hot skillet.
  • Bake at 450° for 20 to 22 minutes or until a wooden pick inserted in center comes out clean.

Notes / Tips / Wine Advice:

To Lighten:

To reduce fat and calories, substitute ¾ cup fat-free milk for whole milk and ¼ cup egg substitute for 1 large egg.
