Creamed-Corn Cornbread

yellow cornmeal

milk

vegetable oil

8½-ounce can cream-style corn

2 to 3
teaspoons
vegetable oil or bacon drippings
Instructies
Combine first 5 ingredients in a bowl; make a well in center of mixture.
Stir together milk and next 3 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened.
Coat bottom and sides of a 9-inch cast-iron skillet with vegetable oil or bacon drippings.
Place skillet in a 450° oven for 5 minutes.
Remove from oven, and immediately spoon cornbread batter into hot skillet.
Bake at 450° for 20 to 22 minutes or until a wooden pick inserted in center comes out clean.
Notes / Tips / Wine Advice:
To Lighten:
To reduce fat and calories, substitute ¾ cup fat-free milk for whole milk and ¼ cup egg substitute for 1 large egg.
