Creamy Chicken Wild Rice Soup

Equipment

Ingrediënten

  • 4 tbsp butter
  • ½ onion – finely chopped
  • ½ cup celery – chopped
  • ½ cup carrot – sliced
  • ½ lb fresh mushrooms – sliced
  • 6 tbsp flour
  • 4 cups chicken stock
  • 1 cup wild rice
  • ¾ lb boneless skinless chicken breast – cooked and shredded
  • ½ tsp salt
  • ½ tsp curry powder
  • ½ tsp dried parsley
  • ¼ tsp black pepper
  • ½ cup slivered almonds
  • 2 tbsp sherry wine
  • ¾ cup half & half

Instructies

Sauté in sauce pan:

  • Onion
  • Celery
  • Carrots

Add sautéed vegetables to crock pot along with the following ingredients in this order:

  • Mushrooms
  • Flour
  • Chicken stock
  • Wild rice
  • Chicken
  • Salt
  • Curry powder
  • Parsley
  • Black pepper
  • Almonds
  • Sherry
  • Cook on low for 4-5 hours
  • Add half & half 1 hour before serving

Notes / Tips / Wine Advice:

Serves 4-5 | Total time: 2 hrs 25 mins
Variation
Use homemade turkey stock instead of chicken broth, and whole milk instead of half & half. Cut chicken breasts into chunks and coat them in curry powder before sautéing.
