Creamy Chicken Wild Rice Soup

- 4 tbsp butter
- ½ onion – finely chopped
- ½ cup celery – chopped
- ½ cup carrot – sliced
- ½ lb fresh mushrooms – sliced
- 6 tbsp flour
- 4 cups chicken stock
- 1 cup wild rice
- ¾ lb boneless skinless chicken breast – cooked and shredded
- ½ tsp salt
- ½ tsp curry powder
- ½ tsp dried parsley
- ¼ tsp black pepper
- ½ cup slivered almonds
- 2 tbsp sherry wine
- ¾ cup half & half
Instructies
Sauté in sauce pan:
- Onion
- Celery
- Carrots
Add sautéed vegetables to crock pot along with the following ingredients in this order:
- Mushrooms
- Flour
- Chicken stock
- Wild rice
- Chicken
- Salt
- Curry powder
- Parsley
- Black pepper
- Almonds
- Sherry
- Cook on low for 4-5 hours
- Add half & half 1 hour before serving

Variation
Use homemade turkey stock instead of chicken broth, and whole milk instead of half & half. Cut chicken breasts into chunks and coat them in curry powder before sautéing.
