Decadent Avocado Chocolate Mousse

Equipment

  • Microwave-safe bowl (for melting chocolate)
  • 6 small dessert dishes’

Ingrediënten

  • 455 g 1 pound firm silken tofu, cut into cubes
  • 1 ripe avocado halved, pitted, and peeled
  • 84 g ¼ cup agave nectar or 60 ml pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 16 g 2 tablespoons instant coconut milk powder (optional, check ingredients if using)
  • 350 g 2 cups nondairy semisweet chocolate chips or chopped bittersweet chocolate, melted and cooled

Instructies

  • Place the tofu in a food processor and blend until smooth.
  • Add the avocado, agave nectar, vanilla extract, and coconut milk powder (if using) to the processor.
  • Blend until combined.
  • Add the melted, cooled chocolate and continue blending until the mixture is perfectly smooth, scraping the sides of the processor as needed.
  • Divide the mousse among 6 small dessert dishes.
  • Chill in the refrigerator for at least 2 hours or overnight before serving.
