Dijon Pork Crusted Cod
The pork rinds lend a crunchiness and a “bready” quality — without the carbs. You can find pork rinds in a variety of flavours, so don’t be afraid to experiment or to even make your own by crushing your own pork rinds.

- ½ cup crushed pork rinds
- ⅛ teaspoon salt
- ¾ tablespoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1 tablespoon butter melted
- 2 170 gram cod fillets
Instructies
- Preheat air fryer at 180°C for 3 minutes.
- In a small bowl, combine pork rinds, salt, mustard, lemon juice and butter.
- Press mixture evenly across tops of cod fillets.
- Place cod in air fryer basket lightly greased with olive oil.
- Cook cod for 10 minutes until opaque and flakes easily with a fork.
- Transfer fillets to two medium plates and serve warm.
