Dijon Pork Crusted Cod

The pork rinds lend a crunchiness and a “bready” quality — without the carbs. You can find pork rinds in a variety of flavours, so don’t be afraid to experiment or to even make your own by crushing your own pork rinds.

Ingrediënten

  • ½ cup crushed pork rinds
  • teaspoon salt
  • ¾ tablespoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon butter melted
  • 2 170 gram cod fillets

Instructies

  • Preheat air fryer at 180°C for 3 minutes.
  • In a small bowl, combine pork rinds, salt, mustard, lemon juice and butter.
  • Press mixture evenly across tops of cod fillets.
  • Place cod in air fryer basket lightly greased with olive oil.
  • Cook cod for 10 minutes until opaque and flakes easily with a fork.
  • Transfer fillets to two medium plates and serve warm.
