Ingrediënten

Makes 1½ cups

  • ½ cup 1 ounce dried tomatoes (packed without oil)
  • 1 cup vegetable broth divided
  • ½ cup fresh basil leaves
  • ¼ cup freshly grated Parmesan cheese
  • tablespoons pine nuts
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground white pepper
  • 1 garlic clove
  • 1 teaspoon cornstarch

Instructies

  • Combine tomatoes and ½ cup broth in a small saucepan; bring to a boil.
  • Remove from heat; let stand 10 minutes.
  • Process tomato mixture, basil, and next 6 ingredients in a food processor or blender until smooth, stopping once to scrape down sides.
  • Set tomato mixture aside.
  • Combine remaining ½ cup vegetable broth and cornstarch in a small saucepan.
  • Bring to a boil over medium heat, stirring constantly; boil 1 minute.
  • Remove from heat; stir in tomato mixture.
