Delight in these savory pork and bacon skewers marinated in a rich coconut curry sauce – perfect for parties or weeknight dinners.
Ingrediënten
- 1 cup cream of celery soup
- 1 13.5-ounce can coconut milk, unsweetened
- 2 tablespoons tamari sauce
- 1 teaspoon yellow mustard
- 1 tablespoon honey
- Salt and freshly ground white pepper to taste
- ½ teaspoon cayenne pepper
- ½ teaspoon chili powder
- 1 teaspoon curry powder
- 2 pounds pork tenderloin cut into bite-sized cubes
- 4 ounces bacon cut into pieces
- 12 bamboo skewers soaked in water
Instructies
Prepare the Marinade
- In a large pot, combine the cream of celery soup, coconut milk, tamari sauce, mustard, honey, salt, white pepper, cayenne, chili powder, and curry powder.
- Bring to a boil, then reduce the heat and simmer for 13 minutes.
Marinate the Pork
- Add the pork cubes to the pot and gently stir to coat.
- Refrigerate for 2 hours to allow the flavors to meld.
Assemble the Skewers
- Thread the marinated pork cubes onto the soaked bamboo skewers, alternating with pieces of bacon.
Cook the Skewers
- Preheat the air fryer to 370°F (185°C).
- Place the skewers in the air fryer basket and cook for 15 minutes, turning a couple of times for even cooking.

- Serve the skewers warm and enjoy.
