Ingrediënten
- ½ teaspoon baking powder
- ¼ cup 64 g crunchy natural peanut butter or tahini
- ¼ cup plus 2 tablespoons 42 g flax meal
- 2 tablespoons 20 g brown rice flour
- 2 teaspoons pure vanilla extract
- ½ cup 160 g strawberry or other all-fruit spread
- ½ cup 96 g raw sugar
- 1 can 15 ounces, or 425 g cooked garbanzo beans, drained and rinsed
Instructies
- Preheat the oven to 350°F (180°C, gas mark 4).
- Lightly coat an 8-inch (20-cm) square baking pan with nonstick cooking spray.
- In a food processor, combine the garbanzo beans, raw sugar, fruit spread, peanut butter or tahini, vanilla extract, flax meal, brown rice flour, and baking powder.
- Blend until perfectly smooth, scraping the sides occasionally.
- Pour the batter into the prepared pan and level it with a spatula.
- Bake for 26 minutes, or until set and firm to the touch.
- Let cool on a wire rack, still in the pan.
- Chill for a few hours before slicing and serving.
- Enjoy cold, and store any leftovers in the fridge.
