Garlic-Crumbed Tomatoes

  • 2 Tablespoons Butter Or Margarine
  • 1 Garlic Clove Crushed With Garlic Press
  • ½ Cup Fresh Bread Crumbs
  • ¼ Cup Loosely Packed Fresh Basil Or Parsley Leaves Chopped
  • ¼ Cup Freshly Grated Parmesan Cheese
  • ¼ Teaspoon Salt
  • Teaspoon Ground Black Pepper
  • 2 Ripe Large Tomatoes 12 Ounces Each, Cored And Cut Crosswise In Half

Instructies

  • Arrange oven rack in upper third of oven.
  • Preheat oven to 425°F.
  • Line cookie sheet with foil.
  • In 10-inch skillet, melt butter over medium heat.
  • Add garlic and cook, stirring, until fragrant, about 1 minute.
  • Remove skillet from heat; stir in bread crumbs, basil, Parmesan, salt, and pepper.
  • Place tomato halves, cut sides up, in prepared pan.
  • Top with crumb mixture.
  • Roast until tomatoes are heated through and topping is golden, about 15 minutes.
