Garlic-Crumbed Tomatoes
Oven-roasted tomatoes are topped with bread crumbs seasoned with garlic, basil, and Parmesan for a simple but yummy side dish.

- 2 Tablespoons Butter Or Margarine
- 1 Garlic Clove Crushed With Garlic Press
- ½ Cup Fresh Bread Crumbs
- ¼ Cup Loosely Packed Fresh Basil Or Parsley Leaves Chopped
- ¼ Cup Freshly Grated Parmesan Cheese
- ¼ Teaspoon Salt
- ⅛ Teaspoon Ground Black Pepper
- 2 Ripe Large Tomatoes 12 Ounces Each, Cored And Cut Crosswise In Half
Instructies
- Arrange oven rack in upper third of oven.
- Preheat oven to 425°F.
- Line cookie sheet with foil.
- In 10-inch skillet, melt butter over medium heat.
- Add garlic and cook, stirring, until fragrant, about 1 minute.
- Remove skillet from heat; stir in bread crumbs, basil, Parmesan, salt, and pepper.
- Place tomato halves, cut sides up, in prepared pan.
- Top with crumb mixture.
- Roast until tomatoes are heated through and topping is golden, about 15 minutes.
