General Tso’s Broccoli “Fried” Rice
Fried rice is the quintessential leftovers dish, but sometimes you don’t want to handle the wok and all the prep and dishes that come with it. The air fryer still gives you exceptionally crispy rice, but without all the stirring, flipping, and heating up your kitchen with a high-heat flame. The rice and broccoli toast up super crunchy and then get drizzled with a quick General Tso’s–style sauce. Use the leftover sauce as a condiment on sandwiches or as a dip for fried chicken and french fries.
Ingrediënten
- 2 cups cooked and cooled white rice
- 1 cup broccoli florets 4 ounces
- 1 tablespoon plus 2 teaspoons vegetable oil
- 1 teaspoon toasted sesame oil
- Kosher salt and freshly ground black pepper
- 1 cup vegetable stock
- 4½ tablespoons rice vinegar
- 4½ tablespoons tomato paste
- 3 tablespoons soy sauce
- 1 tablespoon finely grated garlic
- 1 tablespoon finely grated fresh ginger
- 2 teaspoons cornstarch
- Âľ teaspoon crushed red chile flakes
Instructies
- In a bowl, combine the rice, broccoli, vegetable oil, and sesame oil.
- Season with salt and pepper and toss to coat evenly in the oils.
- Transfer to a 7-inch round cake pan insert, metal cake pan, or foil pan.
- Place the pan in the air fryer and cook at 350°F, stirring every 5 minutes, until lightly toasted and crunchy, about 12 minutes.
- Meanwhile, in a small saucepan, combine the stock, vinegar, tomato paste, soy sauce, garlic, ginger, cornstarch, and chile flakes.
- Bring to a simmer, then cook until reduced and thickened, about 5 minutes.
- Remove the pan from the heat and let the sauce cool while the rice and broccoli cook.
- Remove the pan from the air fryer and divide the rice and broccoli between bowls, then drizzle with some of the sauce.
- Save any remaining sauce in an airtight container in the refrigerator for up to 2 weeks.
