Ginger and Butternut Squash Tartlet

Ingrediënten

  • 1 butternut squash cut into ½-inch cubes
  • 2 teaspoons salt
  • 1 shallot diced
  • 4 tablespoons goat cheese
  • 1 teaspoon grated nutmeg
  • 3 tablespoons fresh grated ginger
  • 8-10 Tartlet Shells
  • Parsley optional

Makes 8-10 Tartlets

Instructies

  • Preheat the oven to 400°F.
  • Roast the butternut squash cubes for 40 minutes.
  • Add the roasted butternut squash to a blender or glass bowl.
  • If you’re using a glass bowl, you will need an immersion blender.
  • Add salt, diced shallot, goat cheese, grated nutmeg, and fresh grated ginger to the bowl or blender.
  • Blend the mixture until smooth.
  • Pipe the filling into the tartlet shells.
  • Top the tartlets with additional goat cheese and parsley, if desired.
